*This recipe doesn't have Ube coloring (but you can still add into recipe) which makes the bread color like a pandesal with filling but still tastes like the usual ube cheese pandesal. :)
Ingredients:
2 ¼ teaspoons instant dry yeast
6 tablespoons white granulated sugar
3 tablespoons butter softened/ coconut oil
2 medium size eggs
1/2 cup milk (room temp)
1 teaspoon salt
3 ½ cups bread flour or APF
vegetable oil, for kneading
Bread crumbs
Stuffing:
12 slices of cheese in diagonal (1/2cm thick and 4cm long)
1/2 cup ube halaya (store bought)
Instructions:
Since I am using a instant yeast, I will skip proofing the yeast. But for some they may want to proof it, you can use warm milk and 1 tbsp of sugar.
Mix all dry to one bowl and wet to another bowl.
Pour 1 cup of the dry ingredient to the wet, then gradually add the remaining.
Knead for about 10 to 15mins until dough becomes elastic but still tacky.
Brush some oil on the bowl and put on the dough and cover to let it rise for 1-2hrs.
When dough become 2x its size, roll and cut into 12 equal portions.
Flatten the dough and put in 1 tbsp of halaya and cheese in the center and form into ball.
Roll into breadcrumbs and arrange in a tray.
Let it sit and rise again for 30mins-1hr.
Preheat oven at 350F/177C. Put in tray and cook ffor 20-25mins.
Remove from oven and let it cool before serving.
